At Coyote Moon Coffee we take pride in producing and delivering the freshest and most flavorful coffee possible. From the selection of the beans to the consumer-ready packaging. We spend a great amount of time selecting beans for superior quality from some of the best importers and coffee growing regions in the world. Upon delivery all beans are immediately inspected and cupped and then stored in a controlled environment. This process is critical in delivering a coffee that maintains its flavorful characteristics. In fact, if this storage is not done correctly you can never recover the natural flavors.

Next our micro-roasting process is tedious and personally attended to by one roaster to develop the full taste of the coffee and to produce a profile of continuity with each roast. This process of roasting in small batches creates a bean that has been personally handled and cared for from start to finish. The roasting is performed with a scientific understanding of the roasting machine and characteristics of the bean but with an artisan flare for flavor. At each step in the roasting process the beans are timed, visibly analyzed and smells are noted. At the end of the roasting they are cooled and immediately packaged. We do not de-gas, grind or use paper bags; as this would allow the beans to be exposed to too much oxygen and would jeopardize the flavor tremendously. The packaging is the final step. We use the highest quality bags with a one-way valve to preserve the flavors and aromas of the bean. We heat seal the bag to obtain a complet

ely air-tight environment. The gases are able to penetrate through the valve while the oxygen from outside the bag is not able to enter. You might notice when you receive your coffee that the bag looks inflated. This is not air, it is a gas by-product produced from the beans. This is often very noticeable when you have very fresh beans that have not been exposed to the air. Once the gases have fully expanded in the bag it will begin to excrete the gas out the valve. I especially love to squeeze the bag and smell the coffee at this point. The aroma is fabulous. In addition to the valve, the bag also has a zip-lock component to help you, the consumer, to continue to preserve the flavors after you have opened your coffee at home. For best results squeeze as much air out of the bag prior to zipping it shut after each usage.

The final stage of this process is that we have discovered the ability to ship a one-pound bag to your door through the USPS flat rate postage for only $4.95. In addition we offer FedEx Ground delivery which is remarkably affordable. We believe that these shipping options offer a great deal of attraction to the consumer to be able to ship at a reasonable rate.

Hopefully you have noticed as well, that we only sell our product by the pound, not by the ounce. The specialty coffee market has moved toward a process in which you rarely can purchase coffee in one pound increments. I personally believe this becomes a bit deceptive to the consumer because the history of packaging coffee has always been by the pound. Our prices are extremely competitive when you consider that we only sell by the pound. Our belief is that roasting should be a process in which the natural flavors of the coffee bean is extracted to perfection. By doing so, along with packaging in a superior process, we can deliver a specialty coffee to you that can have a long shelf life even after you open the bag in your home.

 

 

Medium and Dark Roasting Processes:

 

Our typical roasting process is to either a Medium or Dark roast depending on the type of bean. Each bean selection will note the

roast. We will not “over roast” our beans and destroy the flavor. If you are used to a “French Roast” I challenge you to try one of our Dark Roast options and enjoy a full-bodied flavor that is not bitter. Over-roasting has been very prevalent in the market and sometimes identified as a dark roast. We strive to produce a perfect dark roast that does not burn the beans and therefore promises not to disappoint in flavor.

 

 

 

Why Whole Beans?

 

Exposure to air is the primary reason. When you grind beans you are producing more surface area to be exposed to oxygen. At that point your flavor diminishes tremendously and at a quick rate. If you enjoy and wish to purchase a quality coffee bean it would be a shame not to experience the flavors of freshness because of pre-grinding. Grinders are available at a very economical rate. If at all possible we recommend a burr style grinder. However if you have a blade grinder that will suffice and is still heads above pre-grinding before packaging.

At home try to grind only the amount of beans that you will need for each brewing. Re-seal the Coyote Moon Coffee bag with as little air in the bag as possible. This process of coffee making will produce the best possible cup. ENJOY.
